Fusing this hand harvested vegetable from the pristine Atlantic Waters off the Connemara coast with mouth-watering tastes from local suppliers and artisan ingredients. The exciting new recipes from Head Chef Paddy Anslow will bring whole new tastes and techniques to the Galway restaurant market. Specialties include signature Dillisk dishes from breads, main dishes, speciality dishes and their soon to be infamous Dillisk dessert.

Head Chef Paddy Anslow began his professional cooking career at the age of 18, working in a small family run restaurant in Co Clare where his passion for fresh, locally produced food and in particular seafood. His hotel career originated when working in a hotel in his hometown Limerick. This ignited his passion for working with larger teams and it was here that he was awarded his first 2 of the 5 “AA rosettes for excellence” of his career. Fast forward 15 years on and he finds himself back on the West coast where his passion for using fresh products & ingredients continues to grow.
Paddy says “Our menus are designed around the best available local seasonal produce. Dillisk on The Docks guarantees dishes which feature top quality meat and fish whilst also giving close consideration to the best seasonal vegetable and fruit available. I am so excited to be part of this new adventure at the Harbour Hotel, I have had lots of fun creating new and amazing dishes with the local seaweed and I am looking forward to sharing them with you when we open.”
