Dillisk on The Docks will present a whole new palette of flavours introducing the diner to seaweed, the unsung superfood of the sea. Fusing this hand harvested vegetable from the pristine Atlantic Waters off the Connemara coast with mouth-watering tastes from local suppliers and artisan ingredients. The exciting new recipes from Head Chef Paddy Anslow will bring whole new tastes and techniques to the Galway restaurant market. Specialties include signature Dillisk dishes from breads, main dishes, speciality dishes and their soon to be infamous Dillisk dessert.

We will be combining both modern-creative and traditional styles of cooking using only local producers. Our relationship with local suppliers is very important to us particularly while we will be supplying the freshest of fish, meats, vegetables and recipes. We aim to consistently provide our customers with impeccable service by demonstrating and authenticity and warmth with knowledge, professionalism and integrity in our work. Local musicians, performers, buskers will become part and parcel of the overall theme and atmosphere.”

From the moment you enter the inviting surroundings at the newly re-designed bar and restaurant, the Dillisk experience begins. Earth-toned covered walls, dramatic lighting and the warm tans of the tufted leather banquettes are a gentle complement to the subdued red-shaded sconces, elegant gold draping’s and spirited red, yellow, and tan carpeting that surround Dillisk on the Docks. Scents of fresh herbs, breads, infusing fish and meat dishes wafting from the kitchen, you will know you have come to the right place to sample the delicious fare of the Atlantic Ocean and Galway’s best local suppliers.

The Dillisk menu embraces this culinary style by highlighting the meats, fish and characteristics of the West of Ireland’s rich countryside and nurtured sea beds. The dillisk that is found locally is a rich and luscious one that delivers a unique and distinguished taste.

Head Chef Paddy Anslow began his professional cooking career at the age of 18, working in a small family run restaurant in Co Clare where his passion for fresh, locally produced food and in particular seafood. His hotel career originated when working in a hotel in his hometown Limerick. This ignited his passion for working with larger teams and it was here that he was awarded his first 2 of the 5 “AA rosettes for excellence” of his career. Fast forward 15 years on and he finds himself back on the West coast where his passion for using fresh products & ingredients continues to grow.

Paddy says “Our menus are designed around the best available local seasonal produce. Dillisk on The Docks guarantees dishes which feature top quality meat and fish whilst also giving close consideration to the best seasonal vegetable and fruit available. I am so excited to be part of this new adventure at the Harbour Hotel, I have had lots of fun creating new and amazing dishes with the local seaweed and I am looking forward to sharing them with you when we open.”

The relaxed atmosphere of the restaurant is also a place to sit back with Dillisk’s innovative cocktails and extensive wine list not forgetting their selection of gins, whiskey’s and spirits. The bar, with its stylishly trendy decor, comfortable furnishings, muted lighting, and blend of soft and vibrant colours is a sizeable sleek bar surrounded by conversation tables and pockets of inviting living room seating.
